To Die For Macaroni and Cheese

Our guilty pleasures are legion (at least mine are) and they tend to show up on us in the most unenviable locations. Indulging just makes us love life that little bit more and so we happily "toddle" along and continue enjoying what we love regardless of the possible consequences knowing that hiking around the grocery store is probably not going to offset the extravagance BUT WE JUST DONT CARE.

There is nothing to be said about Macaroni and Cheese that you do not already know. It is delicious, it is versatile and it can be eaten as a stand alone meal. What could be better?  Well, we could possibly pair it with a nice Whiskey to complete the meal!  I really LOVE that idea.  Rye bread crumbs on top of the dish and pairing it with a Rye Whiskey!

❖ Ingredients:

  • Elbow Macaroni - 4 c dried
  • Sharp Cheddar Cheese - 1 lb
  • (shredded)
  • Butter - 1 stick + 2 tbl
  • Egg - 1 lrg
  • Milk - 2 1/2 c
  • Flour - 1/4 c
  • Dried Mustard - 3 tsp
  • Salt - 1/2 tsp
  • Pepper - 1/2 tsp
  • Bread Crumbs - 1 c

❖ Directions:

  1. Preheat the oven to 350 degrees.
  2. Cook the macaroni in a large pot according to the directions on the packaging. DO NOT overcook. When done, dump into the colander and rinse with cool water.
  3. Beat the egg in a 1 c measuring cup.
  4. Melt 1 stick of butter in the medium saucepan over low heat. When it is fully melted, start whisking your flour in slowly. When it is smooth and bubbly, start whisking in your milk slowly. Add the mustard and continue to whisk until smooth.
  5. Remove from the heat and pour 1/4 c of the sauce into the beaten egg whisking constantly to prevent the egg cooking. Pour the egg mixture back into the sauce and blend.
  6. Add the cheese stirring again until the cheese has melted.
  7. Add salt and pepper and mix well.
  8. Put the drained macaroni in a buttered baking dish. Pour the sauce over the top and mix gently (make sure the macaroni is all coated).
  9. Top with a sprinkle of your favorite bread crumbs (I love Italian on mine) and bake for 30 minutes or until bubbly and brown on top.

I can feel my hips growing and I JUST DON’T CARE!!!
