This is an update on a woman with decades of experience who is READY to launch a new brand for Sazerac but who is waiting patiently for the perfect time to bottle the liquids that she and her now passed partner in crime, John Lunn, had been working on for 7 years.
Allisa Henley’s whiskey journey began decades ago with Cascade Distilling (George Dickel) where she worked alongside her sidekick of 20 years, John Lunn. In 2016, she and John took their show on the road and partnered with Sazerac to develop a new Tennessee Whiskey that would be run at the rebranded and relocated Avery Trail Distillery, now known as the A&J Bond Distillery in acknowledgement of the pair’s long lasting creative partnership and bond of friendship.
Their collaborative work has resulted in a much-anticipated new release for Sazerac along with a 10-year plan for the development of a new destination distillery to be located on 55 acres in the rolling hills of middle Tennessee.
Currently, Allisa is producing this new Tennessee Whiskey as a combination of the liquids coming off both pot and column stills with the express intent of aging until “ready” … a luxury that Allisa acknowledges not all can experience. While the waiting takes patience, Allisa is committed to releasing a product that would be both a tribute to John and an acknowledgement to Sazerac for their partnership and commitment to the process.
Being the self-sacrificing woman that I am, I would like to volunteer to help Allisa with the barrel tasting necessary to know if their aging product is “ready” yet!
