Caramelized Bourbon Pears ... Now, this is how I like to eat my fruit! (p. 159)

In the interest of our collective health, I believe it is important to try to incorporate fruit into our daily diet.  In the interest of our collective mental health, I believe it important to put bourbon on said fruit.  Who is with me?

Ingredients

  • 4 medium to large firm pears
  • 4 tbl unsalted butter
  • 1/3 cup light brown sugar
  • 1 tbl freshly squeezed lemon juice
  • 1/2 tsp vanilla paste
  • 2 tbl bourbon
  • ¼ tsp cinnamon
  • 1/8 tsp nutmeg
  • 1/8 tsp kosher salt
  • ½ cup chopped walnuts

Directions

  • Preheat oven to 375 degrees.
  • Peal, halve and scoop out the center of the pears.
  • Please pears cut side up in a small baking dish with just enough room for the pears to sit side by side.
  • Combine butter and brown sugar in a small saucepan and heat until the butter has melted and the sugar has dissolved.
  • Remove the butter mixture from the heat and stir in the lemon juice, bourbon, vanilla paste, cinnamon, nutmeg and salt.
  • Top the pears with the walnuts, pour the butter mixture over it all and bake for 30 – 40 minutes (until the sugar starts to caramelize).

Serve “as is” or top those sweet babies with a scoop of vanilla or walnut ice cream.
